When I lived in Spain, one of my favorite “first plates” was Ensaladilla Rusa, Russian potato salad. With tuna, olives, and other tasty bits, it tasted nothing like regular mustard potato salad, and was a refreshing summer treat.
Flash forward to now, and potatoes are off the menu for our paleo family. I threw together this salad from things in the refrigerator, and was pleasantly surprised to realize that it tastes of Ensaladilla Rusa.
What’s in it: broccoli slaw (shredded broccoli, carrots, and purple cabbage), tuna, roasted red pepper, tomato, scallion, and avocado, all dressed in a simple vinaigrette. Easy to toss together and easy to substitute with ingredients on hand… a new favorite!
