Chicken Curry


We don’t eat much chicken these days, but since we found some decent chicken thighs on sale, I invented a quick chicken curry.  It has sauteed onions, garlic, carrots, broccoli, chicken, tamari sauce and other spices… with sriracha and sesame seeds on top, it’s just like some yummy take-out, but healthier.

The secret ingredient is arrowroot powder.  I tossed the chicken in some before sauteing, which gives the liquid a thicker, richer consistency.  It somehow turns the dish into comfort food, making this a new family favorite!
