Tapas Night

We’ve been watching José Andrés’ Made in Spain episodes, a really fun show.  He is extremely enthusiastic about food!  In one episode, he caramelizes onions for 45 minutes, then adds an equal volume of eggs to onions, and scrambles them together.  It looked amazing, so I decided to make it, with a few differences.  He served it on crackers, which aren’t Paleo, so I decided to serve it on bacon!  It was fabulous.
My other tapa was Jerusalem artichokes, fried like potato chips, and served with a red pepper dip. It was tasty, but caused quite a bit of intestinal distress later.  Apparently we ate too many!  I think it will be some time before I cook them again.  :)
