I reserved a new Paleo cookbook from the library. (I like to preview books before adding them to our household library!) Well-Fed: Paleo Recipes for People Who Love to Eat, by Melissa Joulwan, is my favorite Paleo cookbook to date!
Joulwan has yummy recipes (I’ve made four so far), but the best part is that she gives many ideas for experimenting with the recipe to match your mood or ingredients. Very useful and tasty!
Pictured above are Scotch Eggs, Cumin Roasted Carrots, and Spicy Kale. I don’t usually try three new items for one meal, but I was that inspired by this book! All three were delicious. We’re happy to have another “to-go” option for breakfast, and the carrots were a hearty and healthy french fries substitute. We generally eat kale steamed with a little olive oil and lemon juice, but the spicy kale was a fun change of pace as well!
I’m looking forward to trying more recipes!
