I took my last personal day off from school today so that Greer and I could celebrate. I wanted to do two things for my birthday: 1) hike in the redwoods, and 2) eat lobster and/or scallops.
We had a nice hike in the Henry Cowell Redwoods State Park, although much of it was in sand (ancient sea bed), which can be tiring. In addition to some big redwoods, the hike includes a section that was like going through a very short canyon, which was fun.
For dinner, we found some lobster tails and large scallops at Sprouts. I baked the lobster with some butter on top, and sauteed the scallops. Simple, and fabulous!
I’ve also had a hankering recently for making cheese, so I made paneer with some milk from Saint Benoit Creamery. We had lots of spinach from the garden, so what better way to enjoy the paneer than in saag panner? This fragrant, spicy Indian dish went surprisingly well with our seafood dinner.
