Yay for New Chicken Recipe!

Our friend Tina offered to make dinner for us at our house tonight, which was wonderful.  She adapted her crockpot chicken recipe for our oven, and it turned out beautifully.  We’ll definitely add it to our repertoire as well, especially since chicken is not always our favorite option…. However, this dish was warm, spicy, and comforting on a cold night.  It was delicious served over cauliflower “rice” (cauliflower grated in the food processor and pan fried for 5-10 minutes in oil/butter and whatever spices or herbs you like).

Here’s what I observed Tina do from the kitchen island:

* carrots (few handfuls)
* prunes (handful)
* golden raisins (small handful)
* sliced onions (optional)
* few pounds of chicken thighs
* spices for the top: curry, garham masala, cumin

Layer everything in the order listed above in a casserole or oven-proo pan with a lid.  Cover the bottom of the pan with water (not too much).  Place it in the oven at 375* or so for an hour, or until the chicken is cooked through.
